Chocolate Cake!

Chocolate is an amazing entity that I am sure I have an unhealthy addiction to. My mom loves chocolate too, and since her birthday is coming up, I decided to satisfy both of our cravings with a delectable chocolate cake. Stay tuned for the recipe and for some mouthwatering pictures!

I used to think baking cakes was super complicated, but it’s actually just dumping and mixing a bunch of ingredients together and baking the concoction. I never realized how fun it was to watch a mixture turn into a magical masterpiece. For the cake I based the recipe on Add a Pinch’s “The Best Chocolate (Ever)”’s recipe, but tweaked the sugar content just a little. Here’s what I used:

1 ½ cups sugar

¾ cup unsweetened cocoa powder

2 teaspoons baking powder

1½ teaspoons baking soda

1 teaspoon salt

1 cup milk

½ cup vegetable oil (I used corn)

2 large eggs

2 teaspoons vanilla extract

1 cup boiling water

Directions

Preheat your oven to 350 degrees Fahreinheit. Combine the dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda, and salt) in a mixing bowl. Give it a quick mix with a hand whisk.

Then, add wet ingredients (milk, vegetable oil, eggs, vanilla extract, water) and mix with an electric mixer.

Divide the batter evenly into two 8 inch baking pans. Bake for 30 minutes.

When the cake has finished baking, let it cool on a wire rack. Now it’s time to make the frosting! I used:

1 ½ cups softened butter

1 cup unsweetened cocoa

4 ½ cups confectioner’s sugar

½ cup cornstarch

½ cup milk

2 teaspoons vanilla extract

I also based the frosting recipe on Add a Pinch’s, but instead of 5 cups sugar I used a bit of cornstarch.

Directions

Cream the butter and cocoa powder together with an electric mixer. Then, add the sugar, cornstarch, and milk a little at a time. After all those have been added, mix in the vanilla extract.

After the cake was assembled, I decorated it with fresh raspberries and blueberries. Keep scrolling for some aesthetic pics!

IMG_3737The results were amazing! The cake is super rich and moist and the frosting is so smooth. The sugar content is just right. It’s the perfect cake for any occasion.
